Back in May of this year we started squirreling away a few blocks of cheddar each month to age. After around 3 months of aging we started cutting some of these for milder cheddar, which we call “Ashford Cheddar.” But we also left some others to continue aging. Well, after 6+ months of waiting, these cheddars are sharp and ready! We named this sharper cheddar, “Ashford Reserve,” and it is now available at the farm store.
In addition to a new flavor of cheese, you can also find our cheeses in a few new places. Just this past weekend we delivered curds, Buttercup, and some cheese spreads to Katuah Market in Biltmore Village. For those of you familiar with Asheville’s local grocery markets, Katuah is owned by John Swann, former owner of Greenlife Grocery in downtown Asheville. Their soft opening was actually yesterday, so congratulations to them!
Located off of 321 and locally owned by Kevin and Liz Tincher, Blowing Rock Produce and Provisions has also started carrying our cheeses, including Ashford Reserve, Ashford Cheddar, and Buttercup (our soft, yet slice-able, salt-brined cheese).
For those wine enthusiasts out there, Linville Falls Winery is offering some of our cheeses on their cheese platters. The winery is owned and operated by the Wiseman family, and is located on US 221 about 5 miles north of the farm.
Cheese lovers around Black Mountain can still find our cheeses at The Artisan Gourmet Market, owned by Kurt & Emily Burritt, and the Butcher Shop of Foothills Farm & Butchery, owned by the McKissick family of Old Fort, NC.
We’ll be at the farm store on Friday and Saturday this week from 10:00-6:00. We are also planning to be open this Monday, the 23rd, from 10:00-6:00. Stop by and enjoy a hot cup of coffee or cider while you sample some cheese.
