Meet the Cheese: Ashford Cheddar

Our Ashford Cheddar was one of the very first cheeses that we made.  Cheddars are traditionally from England and have a wide range of flavors and textures.  Younger cheddars have a milder flavor and creamier texture, while older cheddars have much more bite and are a bit crumblier.

Ashford Cheddar was named after the region where our farm is located.  We have both a mild version aged for roughly 3 months and then Ashford Reserve, which is aged for 6 – 8 months.  Reserve has a much sharper flavor due to the extra time it ages in our aging room.

Ashford Cheddar is great for snacking on a cheese plate with crackers, some jam, nuts and olives.
